Tricks of the Restaurant Trade

As Tricks of the Restaurant Trade was aired on Monday night June 17th on Channel Four, featuring a whole section on menu engineering, we were rather proud that our managing director, Carla McKenzie, had been part of the advising team.

In our complex world, the pressures on high street casual dining restaurants have never been greater. The programme shared some of the intelligent approaches being adopted to menu engineering. Of course, it is challenging to cover this complex subject in such a short space of time; thirty minutes.

In the wake of some of the high street’s most loved brands entering into CVAs (Company Voluntary Arrangements) or insolvencies, it is clear that the model needs to change.

Great menu engineering, underpinned with innovation, vision and a sustainable business plan is surely part of the way forward.
